Codfish is a specialty of Mediterranean cuisine, found in Spain, Italy, France and Portugal. They are very popular in Portugal, as well as in Brazil and Angola.
In the center and south of Portugal they are called ‘pastel de cod’ and in the north ‘cod cakes’. In Brazil, it is a very popular snack in Portuguese restaurants and wineries. The first official recipe of the codfish cookbook dates back to 1904, from a book called the Kitchen and Cup Treaty, by Carlos Bandeira de Melo, an officer in the Portuguese army who used the pseudonym Carlos Bento da Maia
